The pattern was designed specifically for variegated yarn, so it is a plain stocking stitch. You can, however, knit it in one colour or with stripes; there are no rules after all.
As this is a Measure & Make pattern, I cannot predict your yarn requirements. The pattern will work for any yarn weight.
